Halloumi is an imported cheese from Cyprus made from cow, goat and sheep milk. Its firm and springy when raw and brined like Feta cheese. Halloumi has a mozzarella-like texture, but is both saltier and stronger in flavor. When you grill or cook with Halloumi it loses its saltiness becomes creamy and tender. This is the one cheese you can grill or fry up beautifully because it has such a high melting point. Halloumi is usually paired with watermelon slices during Cyprian summers. Serve is as an appetizer grilled or pan fried with cold beer or thinly sliced on salads.
